Ah, fillings. They make doughnuts worth biting into. They are the hidden, mysterious center of many a baked good. This is by no means an exhaustive list of fillings. Heck, you could take a jar of fruit spread and use that as a filling if you want (and sometimes I do). Mix that jar of fruit spread with some whipped cream and stabilize the whole thing with gelatin, and you've got an easy mousse filling. Don't limit yourself; spread your creative pastry wings:-)
