I am excited about all the interest in the culinary arts that has been fostered by The Food Network, Top Chef and The Travel Channel, but it is a twin-edged sword. On one hand, it's great to see people getting passionate about cooking and baking, but on the other, these same people have no idea of the reality of working in a professional kitchen. Folks might have notions of cooking like Giada in her low-cut sweaters, or like Michael, in his Italian loafers in his lovely home. You want to do that, fine: do it in your own home. True professional cooks, bakers and chefs are dressed up to the neck, down to the elbows at least and down to the tops of their (sometimes) steel toed shoes. If you're really interested in pursuing a culinary education, educate yourself first on the realities of working professionally. If you are serious, you've done the research and you've spent your time in a kitchen and realize you want to do that for the rest of your life, then do so with my blessing. Just please don't get into professional cooking without first doing your research.
