Spiced Nuts

Spiced nuts are great as a party snack, as a garnish for desserts, or even in a salad. There's no set recipe, as far as I'm concerned, but here is the procedure.
nuts
egg whites
brown sugar to taste
salt to taste
spice mixture
Think of the egg whites as the glue to hold the spices on the nuts. Mix egg white, sugar, salt and desired spices (anything from chili powder to cinnamon to cayenne to curry to any combination that is pleasing to you). Taste a little bit to see if you like it, then thoroughly stir in the nuts. The nuts should be just lightly coated. You don't want tons of gloppy egg white on them, so watch yourself.
Spread nuts in a single layer on a silpat-lined baking sheet(s). If you don't own a Silpat, just spray a sheet pan. Don't use parchment for this--the egg white will stick to it. Bake at 325 degrees, F, for 5 minutes, stir, and then bake for 5 minutes more, until nuts are golden and fragrant. Take them out and let them cool. Check for any gumminess. If they aren't completely crisp, put them back in the oven for a minute or two. Watch them carefully--burning can happen quickly.
